From a 2 a.m. plate of eggs to a reservation-only steak dinner, our four dining rooms cover most of what a Gregory Street weekend calls for.
The Assay House
Steakhouse & Wine Room · 5 PM – 10 PM
Colorado ranch beef, a wine list built around Western Slope producers, and a dining room named for the assay offices that once tested ore samples up the gulch. Reservations recommended, especially Friday and Saturday.
Gregory Street Diner
24-Hour Diner Counter
Counter seats, booths, and a breakfast menu served around the clock — the room where the gaming floor's late-night crowd and the front desk's early shift end up ordering the same short stack.
Tramway Tavern
Sports Bar & Tavern · 11 AM – Midnight
Named for the aerial ore trams that once ran ore buckets down from the mines above town. Pub menu, a wall of screens, and a rotating list of Colorado draft beer.
Overlook Terrace
Rooftop Lounge & Small Plates · 4 PM – 11 PM
Cocktails and small plates on our top-floor terrace, with the ridge line behind Gregory Street as the backdrop once the sun starts to drop.
Planning a Larger Group?
The Assay House can hold a private dinner for up to 24 guests in its wine room, and Tramway Tavern handles walk-in groups of any size before 8 PM. For anything larger, our events team can arrange catered dining in Gregory Hall or the Richman Room.
